Cowboy Beans

 
  • 1 Pound of ground beef
  • 2 Can of Pork & Beans
  • 1 Can B & M beans (Brick oven baked beans)
  • 1/3 Cup ketchup
  • 1/2 – 2/3 Cup of Maeday BBQ sauce (Sweet Original or Caribbean Flame)
  • 1 Packet Onion Soup Mix
  • 1/4 Cup brown sugar
  • 1 Tablespoon Worcestershire sauce
  • 1 Tablespoon prepared yellow mustard (not dry)
 
Directions:
 
Brown meat and drain.  In large oven proof bowl, spray with non stick spray and add all ingredients including meat.  Bake at 350 for 1 hour.  Best if made 1 day ahead, refrigerate then cover with foil to reheat.  Remove foil last 15 minutes of reheating.

 

Caribbean Flame Cheese Steak Sandwich

 
  • Flank steak or 3/4 great of chicken, sliced
  • 1 Green bell pepper, sliced
  • 1/2 Red onion, sliced
 
 
Directions:
 
Take a flank steak or 3/4 breast of chicken, sliced.  Cook it up however you like (grill, pan – your choice).  Slice 1 green pepper and 1/2 sweet onion thinly.  In a pan, sauté the cooked meat, peppers and onions with Maeday “Caribbean Flame”.  Let simmer for about 20-25 minutes.  Place white american cheese over top and cover with lid for 4 to 5 minutes to let it melt.  Then place in your choice of bun or wrap (try romaine lettuce leaves).  Be sure to include that wonderful juice that is left in pan as the sauce.

BBQ Chicken Roll Up

 
  • 1 Each green and red bell pepper, cut into strips
  • 1 Large onion, thinly sliced
  • 1 lb Boneless skinless chicken breasts, cut into strips
  • 1/3 Cup Maeday “Sweet Original or Caribbean Flame” BBQ sauce
  • Soft-taco sized tortillas, warmed
  • 1 Cup shredded cheddar cheese

 

Directions:

Cook vegetables in large nonstick skillet on medium – high heat for 3 minutes.  Add chicken & cook and stir 3 to 4 minutes or until no longer pink.  Stir in Maeday; cook on medium heat 3 minutes, stirring occasionally.  Spoon chicken mixture down centers of tortillas; top with cheese.  Roll up.  Cut diagonally in half to serve.
