BBQ Chicken Pizza

  • 3 Boneless chicken breast halves (cooked and cubed)
  • 1 Cup of Maeday BBQ sauce (Sweet or Caribbean Flame)
  • 1/2 Bunch fresh cilantro, chopped
  • 1 Cup smoked Gouda Cheese, shredded
  • 1 Cup thinly sliced red onion



Preheat oven to 425 degrees F (220 degrees C).  In a saucepan over medium high heat, combine chicken, barbecue sauce and cilantro.  Bring to a boil.

Spread chicken mixture evenly over pizza crust, and top with cheese and onions.  Bake for 15 to 20 minutes, or until cheese is melted



BBQ Chicken Roll Up

  • 1 Each green and red bell pepper, cut into strips
  • 1 Large onion, thinly sliced
  • 1 lb Boneless skinless chicken breasts, cut into strips
  • 1/3 Cup Maeday “Sweet Original or Caribbean Flame” BBQ sauce
  • Soft-taco sized tortillas, warmed
  • 1 Cup shredded cheddar cheese



Cook vegetables in large nonstick skillet on medium – high heat for 3 minutes.  Add chicken & cook and stir 3 to 4 minutes or until no longer pink.  Stir in Maeday; cook on medium heat 3 minutes, stirring occasionally.  Spoon chicken mixture down centers of tortillas; top with cheese.  Roll up.  Cut diagonally in half to serve.


BBQ Black Bean Salsa

  • 1 Can (15 oz) black beans, drained, rinsed
  • 1 Package (10 oz) frozen whole kernel corn, thawed, drained
  • 3/4 Cup Maeday “Sweet Original” BBQ sauce
  • 1/2 Cup thick salsa
Mix all ingredients until well blended.  Serve with tortilla chips.
