Twice Dipped Chicken Wings

1 Package of Jumbo Chicken Wings

  • Salt and Pepper to taste
  • Wash chicken wings thoroughly
  • Salt and pepper wings on both sides
  • Place on grill (gas or charcoal)
  • Grill chicken until just about ready to remove
  • Put MAEDAY in a bowl and dip chicken wings into the sauce
  • Place wings back on grill and cook for another five minutes
  • Dip sings back on grill and cook for another five minutes
  • Dip wings into Maeday again for a second coating
  • Place back on grill for the last 5 minutes of cooking
  • Remove and enjoy

Vegetarian Black-Eyed Peas

Ingredients needed:

  • 2 lbs. of fresh black eyed pea’s
  • 3 Roma tomatoes (diced)
  • ½ red onion (diced)
  • ¼ bottle vinegar, Carolina Legacy
  • 2 tablespoons extra virgin olive oil

Preparation time:  ½ hour

Cook time:

Soak and cook peas according to package instructions

Add and heat oil to pan.  Add onions and sauté’ until transparent.

Add peas and mix with onions.  Sauté’ peas for approximately 10 minutes then add tomatoes and continue to sauté’ for another 10 minutes.

Add vinegar “Carolina Legacy” a little at a time and adjust to your taste.  Sauté’ for last 5 minutes and enjoy.

Seared Tuna Salad

Ingredients needed:

  • 1 Tuna Steak
  • Romaine lettuce
  • Roma tomatoes
  • Red onions
  • Avocado
  • Mango
  • 2 tablespoons extra virgin olive oil

Preparation time:

Rub meat rub on both sides of tuna and leave to marinate for 2 hours (refrigerate).  Cut up romaine lettuce and slice romaine lettuce, roma tomatoes, red onions, avocado and mango and refrigerate until tuna steak is done.

 

Add oil to pan and heat over medium heat.  Once oil is fully heated place tuna in pan and sear on each side for approximately 1 ½ minute.

Let tuna steak rest once for 5 minutes before slicing.  Slice the tuna and place on top of salad and add your favorite salad dressing.

Cowboy Beans

 
  • 1 Pound of ground beef
  • 2 Can of Pork & Beans
  • 1 Can B & M beans (Brick oven baked beans)
  • 1/3 Cup ketchup
  • 1/2 – 2/3 Cup of Maeday BBQ sauce (Sweet Original or Caribbean Flame)
  • 1 Packet Onion Soup Mix
  • 1/4 Cup brown sugar
  • 1 Tablespoon Worcestershire sauce
  • 1 Tablespoon prepared yellow mustard (not dry)
 
Directions:
 
Brown meat and drain.  In large oven proof bowl, spray with non stick spray and add all ingredients including meat.  Bake at 350 for 1 hour.  Best if made 1 day ahead, refrigerate then cover with foil to reheat.  Remove foil last 15 minutes of reheating.
